Another Craving Conquered
Tonight I made pizza for dinner. It has been awhile, and I still have bread flour. Pizza is easy, but requires many bigger appliances. I used two pans since I made sausage, the VitaMix to puree the tomatoes for the sauce, the big bucket for raising the dough, the food processor to both make the dough and cleaned to then grate cheese, the big wooden cutting board for shaping and cutting the final product with the giant pizza cutter, the baking stone, and my peel for inserting and removing. There is lots of stuff and lots of prep, but the pizza itself takes 8 – 9 minutes to cook.
However, all of this is worth it. Making homemade pizza is wonderful. I made myself stuffed mushrooms using all the pizza toppings. I ate one while my family ate pizza. I said, “These mushrooms were way more tasty when the rest of my family was eating them with me.” I could smell that wonderful crust all through dinner. I hadn’t smelled that dough in awhile. It smelled really good.
Most delivered pizza I could pass by with ease. But mine? That was hard, but I did it. I’m happy because all my size smaller pants fit comfortably now. My other pants will be chucked to the back of the closet. The next size smaller pants are waiting on deck.
Other non-food news: I had to chop off the nails today. They were getting long, but I ended up losing two of them when they split. Plus, the clicking when I typed was getting annoying. They’ll grow back. It doesn’t seem to take them very long. My hair is getting surprisingly long too. I can’t wait until I reach my final look with the growing the hair out project. I do remember declaring that I’d never have long hair again when I cut it off after having Jay. I decided last October that I was going to start growing it out, and I think I did balk one time and cut more off during one of my maintenance cuts, but I think it was partially because I needed to cut out the drastic asymmetrical style that I had.
How do you make your own sauce? That’s my next DIY cooking project.
About 4-7 medium tomatoes, peeled, diced with seeds removed. Then I heat them in a pan with a little water until they are cooked, pulse them in a blender until it resembles crushed tomatoes. Then I put it back in the pan, add 1-3 Tbsp of tomato paste (that I keep in Tbsp sized portions in my freezer) and cook until the tomato paste is blended and the sauce is the thickness that I like it. Then I season with Penzey’s pizza seasoning and little sugar, as necessary by the acidity of the tomatoes. I just taste the sauce until the acidity is gone, but the sauce doesn’t taste sweet.
I’ve also cooked garlic and onions in another pan with olive oil and put it in the sauce after pulverizing the tomatoes. When good tomatoes aren’t in season, I just use canned — Muir Glen organic roasted diced. I’ve also cut up fresh basil and oregano, but the quickest for me is the above with just Penzey’s seasoning. It is my favorite pizza blended seasoning.

Thanks! I rewarded myself by going into my closet and doing a fitting of some of my clothes. I had some great, “I can *wear* this moments” for clothes for the coming autumn. This includes one of my favorite sweaters of Tess’ that I now have. I couldn’t wear it last winter, it would only hook in one spot, and that spot was straining. I can wear it now, and I know once we have our first really cold morning come October, I’ll be able to wear it out. I’m going to buy boots to go with it to celebrate.
Thank you for making the delicious pizza last night! The dough was so chewy and tasty! It was the best dough you have ever made! There are three pieces leftover in the fridge.
You do realize that at some point today you will be coming home. And I will be here.
Good for you that today it isn’t an issue anymore. Craving gone. It will be in the fridge for you as leftovers for dinner. I can even make you breadsticks out of the other ball of dough if you like. Or another pizza. With pepperoni if I think to pick some up today.
