What’s Cooking: June 14th

I haven’t posted about my meals as much as I intended. Sorry. Perhaps because I find pizza more of an easy meal than an interesting meal, even if it is homemade and might I add Penzey’s pizza seasoning which I use in my sauce is the best ever.

Tonight’s dinner is kefta, served with tzatziki and a chopped vege salad consisting of tomatoes, cucumber, onion, dill, and lemon. I’d love to do a really find dice for the veges, but my tiny food processor/chopper broke, so I’ll make it as small as my poor knife skills will allow. This is my first time making tzatziki. It isn’t my first making pita, which I’m also making for dinner. They will go in the oven soon. I’m hoping they will bubble enough to make pockets. If not, then we’ll just slap it on or wrap it as we can.

ETA: Only two of them didn’t bubble up, so we have pockets to stuff our dinner into tonight!

I’m also cooking up some cubed tofu using the same spices at the meat for a non-meat option.

I’ve done zero work on this site today. Everything is almost made. All I’ll have to do at dinner is actually cook the meat. That should give me a couple of hours before dinner to do some work.

Tomorrow will likely be leftovers. I have a pizza dough from the other night that I’ll have to make tomorrow for lunch. We’ll eat what is leftover of that and tonight. Wednesday is dance night, and we don’t get home until after 6:00. That’s usually a good night to pick something up on the way home. Like sushi.
