What’s Cooking Monday and Tuesday
My headache went into migraine mode right before I had to pick up Ada. I did make dinner when I got home from that task, all while chanting the mantra, “I’m almost done. I’m almost done. I’m almost done.”
I threw some flank steak in the slow cooker with a beef broth, tomato paste, onion, diced bell pepper (which I had diced last week and threw in the freezer) and chili powder and let it cook on low all afternoon while I slept. I shred it in the evening, mixed it all together and let it cook another 30 minutes. Then I threw it in flour tortillas with beans, sharp cheddar, salsa and yo-cheese.
The ankle feels better now when at rest. It started hurting again by the time I had dinner on the table, probably because I put away that load of laundry, emptied and reloaded the dishwasher, swept the floor and changed the table cloth. Right after picking up Jay, which included me having to chase him all over the playground. Having the brace helps, though. And yes, M, I did consider getting crutches, but I think that this sprain is tolerable if I just take it easy. It is the 10th time I’ve sprained this ankle in my lifetime and only twice did I have to revert to crutches to get it to heal.
Tomorrow night’s dinner will be cavatini. I have some frozen from the last time I made it. All I have to do is throw it in a pan, cover with foil and let it cook until hot, then add cheese on top and let that melt. Easy. The night after that may have to be leftovers from tonight and tomorrow.
