What’s Cooking Monday & Tuesday & Wednesday
Leftovers from the smoked chicken and molasses bread kept us fed Monday and Tuesday. Monday, I just warmed up a piece along with some leftover potato salad and brisket and green beans. Throw in some BBQ and a peanut butter & jelly sandwich for Ada–which is fabulous on molasses bread–and you have a full meal. I made chicken salad on Tuesday, also served with the bread.
Tonight I decided on a meal of steak and potatoes. I changed the flavors from the typical dish a tad, but found myself not thinking of a way to tie in the potatoes, so they stayed a standard style you would expect with steak. I should look into the potato part for the next time I serve this meal. Here was what I served:
Fillet Mignon with a marinade of lime juice, soy sauce, sesame oil and garlic chili paste, grilled
Baby spinach with apples, walnuts and a vinaigrette of lime juice, rice wine vinegar, soy sauce, grapeseed oil and ginger
Twice baked potatoes with a filling mixed with yo-cheese, 4-year aged white cheddar, buttermilk, butter, salt and toasted onion
I also made some bread and threw some black grapes on the table that Ada had picked out.
Tomorrows meal is not planned. I’m really tired. Ada kept me up Monday night with sleep issues. Jay kept me up last night with sleep issues. Jay wouldn’t stay in bed, so I moved him to the living room with me. He helped me make a brown butter torte for Mac to take to work, and then settled on the loveseat while I slept on the sofa. He was up and down, including smacking me in the face with a banana around 1:00am because he was hungry. I was then up a little after 5:00 to finish Mac’s cake for work and have been up since.
Mac has accepted another position and is leaving KU. The new job will be a great opportunity for him. Today they told him that he was welcome to come back to KU if he needed…as long as he brought his wife’s cooking. So the torte I made went over well, as did the other treat I’ve sent in the past.
Not related to cooking, I need to come up with a zombie costume. Must be October!
