Grilled stuffed portobello mushroom

Tonight’s dinner, it did not feature any chicken. By the time Mac got home with a needed ingredient, it was after 6:00. Prep and cooking of the chicken would have taken over an hour, so I cut out the chicken and stuffed the mushrooms. The stuffing consisted of diced tomato, onion, garlic, orange bell pepper, provolone and garnished with cilantro.

I cooked some bacon from the earlier meal so Mac would have meat.

A light dinner tonight without meat was perfect since tomorrow’s lunch will involve BBQ where even the sides have meat in it–except for the sweet potato fries, which I intend on getting.

Mac put James’ crib back together, even though I said, “If he can climb out of the pack-n-play, he can climb out of the crib.” He got put in it last night, and when we walked out of the bathroom from getting ready for bed, guess who was standing at our door?

Yes, he can climb right out of the crib. Mac took him downstairs to the guest room to sleep so I could get sleep for work. I ended up not being able to fall asleep until after midnight, which ended with a 3:00am wake-up call when Ada decided to cry while going to the bathroom. She came in bed with me, and proceeded to talk and sing for over an hour. I think I may have gotten another hour worth of sleep before it was time to get up. I’m starting the week off exhausted and with a headache–not good.
