Dinner, as it was simmering
I decided to grab my camera to take a photo of dinner while it was cooking, and I wasn’t doing anything but waiting. I didn’t have two main ingredients to make shrimp scampi: white wine and lemons. Boo. I ended up making this, which was good, but would have been much better with the white wine.
Extra virgin olive oil (a little less than 1/4 a cup, maybe?)
3 large cloves of garlic
1 cup reduced sodium chicken broth (white wine substitution)
5 Tbsp butter
salt
pepper
red pepper flakes
juice from 1 lime (sub for the lemon)
small handful of chopped fresh cilantro
large handful of fresh spinach
1lb shrimp
Heat the oil on medium low, then add the garlic and cook for a few minutes. Keep the heat low enough so that the garlic can cook for awhile without burning. Then turn the heat up to high and add the chicken broth, salt, pepper and red pepper flakes, bring to a boil and cook for about 1 minute. Then turn the heat back down to medium/medium high and add the butter and stir until melted. Then add the shrimp and lime juice. Let simmer until the shrimp is all the way cooked, and then add the cilantro and spinach. I let it stay on the heat a little bit to cook the spinach–it doesn’t take long.
I made a little bit of pasta to eat with it. I really, really liked it, but next time, I’m going to plan ahead and have that white wine and lemon and probably sub basil for cilantro.
