Taking the cooking reins again
I have been really swamped with work, so Mac has been doing the cooking, and I have yet to make a meal plan for the week. I did mange to grill some KC strip, and I tried to grill some hamburgers to only run out of gas and then find out that the back-up tank was also out of gas.
We have a full tank of gas, although the back-up is still empty, and although it cooled down today and was only in the lower 50s, I grilled because there is enough light now thanks to DST. Tonight, I picked shrimp, making two dishes.
Dish One
Shrimp marinated in a mixture of lime juice, garlic, olive oil, jalapeno and some Penzey’s fajita spice. Then I threw it on the grill plate.
Dish Two
This one is thanks to my brother. He mentioned it the last time he was here. Shrimp with a sliver of jalapeno, wrapped in bacon, grilled, brushed with habanero BBQ sauce and grilled a little more. I used my grill basket for these.
Mac made some rice to go as a side, as well as piña coladas with the Ron Viejo de Caldas.
There is more shrimp that needs to be used, so that is what we will likely have for lunch and dinner tomorrow. Mac picked up spinach for me. I’m going to make a fajita shrimp salad tomorrow for lunch. There is also bacon for breakfast tomorrow morning.
