Weekly Menu – Better late than never

I didn’t do this on Saturday, but I didn’t get home until after 7:00pm on Friday. The entire day on Saturday was dedicated to birthdays. Mac was kind and took care of James’ food and cake so I didn’t have to come home and cook. It always takes me a few days to get back into sync with my routine when I leave. I just now started planning meals.

Saturday: Mr. Goodcents party platter for lunch, pirate cake, and Stone Creek for dinner.

Sunday: Leftover Mr. Goodscents for lunch, and homemade pizza for dinner. My brother was in town, and pizza is really easy to make. Mac and I learned a new card game, too.

Monday: Mac took care of dinner since I still had not planned anything. He ended up making macaroni and cheese.

Tuesday: Vermont Street BBQ, since I still had not planned anything.

Wednesday: Slowcooker fajitas. They are cooking now.

Thursday: Leftover fajitas

Friday: Either ribs with mashed potatos and green beans or pork tenderloin in a Thai peanut sauce with rice. I took both out of the freezer today.

Saturday: Whatever I didn’t make on Friday, I’m making on Saturday. Plus, I’m making some Valentine’s Day strawberry cupcakes. I’m going to start macerating the strawberries on Friday, if I remember.

Sunday: leftovers

Monday: Roast turkey — this is the big boy that I need to get out of my chest freezer so I can defrost it. I have this day off of work as a holiday as well.

Tuesday Turkey enchiladas

It will take us along time to eat that turkey. You can bet most of next week will involve turkey in some manner. Oh, and I plan on making turkey stock as well. My homemade chicken stock is gone.
