Weekly Menu – January 24th

I’m still going with the theme of cleaning out my deep freeze so I can defrost it. I have a big bag of strawberries that I need to figure out what to do with. I just cannot make ice cream in the winter. The thought of ice cream in the winter almost makes me nauseated. I also have a good supply of cream cheese to use up. I’m sure I could combine the two.

Saturday: Whatever we dig up to eat. I’ll make some egg rolls. I made bread for the week, so maybe toast. Mac is going out for the UFC fights, so it is just me and the kiddos tonight.

Sunday: Baked chicken fingers with green beans and potatoes. I’m not sure about breakfast yet. We usually just eat cereal or toast or fruit for breakfast. I like making it on Sunday mornings. I am tempted to make cinnamon rolls tonight. Or some sort of pastry like thing. Coffee cake. Oh, cream cheese! And strawberries!

Monday: Leftover chili — there was a bowl of frozen chili in the freezer from last month.

Tuesday: BBQ chicken hash – This is a one-dish meal. I have frozen hash browns and an abundance of chicken in my freezer.

Wednesday: Leftovers for the kids, Longhorn Steakhouse for us. We are going out to celebrate a friend’s birthday. And leaving the kids at home.

Thursday: Pad Thai — The only thing this week that doesn’t have anything to do with what is in my freezer. I’m using tofu and shrimp. I think that I’ll have to buy pretty much all the ingredients. I don’t even have peanuts.
