The meal list
Here the meal list for the week:
Sunday: Grilled hamburgers with swiss/mushrooms and grilled potatoes (Idaho and sweet) & onions and grapes
Monday: Cashew curry chicken w/ brown balsamic rice – vegetable unplanned
Tuesday: Chicken quesadillas using frozen leftover chicken filling from enchiladas I made earlier
Wednesday: Spaghetti w/ meatballs — I’m making a wine sauce and cooking it and the meatballs in the crockpot most of the day. I’m using half for the spaghetti and freezing the other half for use later. Probably meatball subs. My typical spinach/fruit/nut/cheese/vinaigrette salad for the side.
Thursday: Grilled chili rubbed filet mignon salad–using the rest of the spinach from the night before.
Friday: Balsamic glazed pork tenderloin w/ almond green beans and baked apples.
I’m also making a garlic mushroom sauce for freezing to have available for baked chicken later.
Ada is the Star of the Week at daycare next week, so we have to make a poster for her today to take tomorrow. Fun!
Saturday we are going to Mac’s high school reunion as well as visiting his grandmother, so no meal planning required that day.
