Day 68: Asparagus
I had forgotten that I picked up the package of ginormous asparagus at Costco. The next three nights will all need to have asparagus. Tonight I made potato soup. I brushed the asparagus with olive oil, sprinkled with sea salt, broiled on high, brushed with balsamic vinegar and boiled it again. James ate his first asparagus and potato soup tonight.
Tomorrow I’m putting some in stir fry. On Monday, I’m adding it to my garlic soba noodles. That should use it all up.
